    Organic food - free from pesticides or chemical fertilisers - is becoming increasingly popular among the farmers and health-conscious of Iran. It's the country's eventual aim to make a quarter of all agricultural goods organic. Tucked away in this small farm in Lavasan (a small town around 25 kilometres east of Tehran), farmer Hamidreza Hosseini is hard at work. He cultivates a wide range of organic products, including fruits and vegetables, all of which are completely free from pesticides and chemical fertilisers. Tucked away in this small farm in Lavasan (a small town around 25 kilometres east of Tehran), farmer Hamidreza Hosseini is hard at work. He cultivates a wide range of organic products, including fruits and vegetables, all of which are completely free from pesticides and chemical fertilisers. "I produce almost 80 different kinds of agricultural goods," says the 57-year-old. "Including different kinds of cabbages, carrots, broccoli, tomatoes, pumpkins and a lot of others." Aside from growing fruits and vegetables for clients, Hosseini also experiments with different crops and offers his clients advice on how best to grow their food in an organic and environmentally-friendly way. "The products are free of pesticides and free of any non-organic additives," he says. Hosseini's techniques have become so popular clients also ask him to create family-sized farms and greenhouses for them, meaning they can cultivate their own organic products at home. A few blocks away, Hosseini is checking on a greenhouse he built on the roof of a luxury building. It's solar-powered and is heated and irrigated automatically, allowing various types of fruits and vegetables to grow all-year round. Cabbages, peppers, pumpkins, lemons, oranges and carrots are among some of the crops. According to Hosseini, the greenhouse can easily cater for a family of ten. "This is a family-sized project, a greenhouse on a roof of a building where it can produce much of the vegetation consumption of a family," he says. "There are almost 25 different varieties of vegetation including some herbs as well as peppers, paprika, eggplants, tomatoes, etc." In recent years, several shops dedicated to organic food have appeared on the streets of Tehran. Ghazaye Salem - or "Healthy Food" - is one of the pioneers, boasting both a shop and restaurant which serves only organic food. Founder, Ebrahim Irandoost opened the business back in 2003 in the hope of promoting a healthier diet among Tehran's population. He also wanted to encourage the consumption of certain ancient Persian foods and drinks. The founder has practiced traditional medicine for years and every day he gives free advice to patients. Instead of prescribing them medicine, he advises patients to treat themselves with a healthy diet and through traditional Persian herbs. He's hopeful more Iranians will embrace organic food and treatments in the future. "We launched this campaign and the people welcomed the move, the reception has been good," he says. "We hope that across the country more people join this campaign." The store boasts organic versions of camel meat, chicken, rice, sugar and olive oil as well as a plethora of Persian herbal drinks. A major development plan in Iran aims to make 25 percent of all agricultural goods organic. But, according to Irandoost, producing organic crops remains costly. "Unfortunately, I can say that we don't have more than 50 organic crops in Iran which are fully free of pesticides and chemical fertilisers," he says. "There is some organic rice, very few organic wheat, organic vegetables and summer crops in Iran. Some people are planting such crops, but they receive no support. The costs are very high, the cost price is very high." This female customer is convinced of the benefits. "I buy everything from here, bread, natural hair colour, herbal teas, sweets, etc," she says. "That's because I'm certain (the products are healthy)." The flowers have to be hand picked as soon as the buds burst, otherwise their fragile perfume dissolves in the heat and insects can attack them. Damask Rose, known as Mohammadi Rose in Iran, is a light pink flower with hard stems armed with thorns requiring the harvesters to wear protective gloves. These deciduous shrubs can grow as up to 7 feet (2 meters) tall and their flowering season, which begins in May, only lasts until mid-June. Drip irrigation is applied in rose farming and shrubs need to be watered throughout the year, well past the flowering season. Alireza Ansari has been a rose grower for 26 years and cultivates 40 hectares of rose farm. Each hectare grows about four tons of flowers that are bagged up and taken away for traditional and industrial distillation. Ansari says: "The yield of Mohammadi (Damask) rose harvested at this farm by about a hundred workers will be taken to workshops which extract rose water and other essences. Some of this rose water and side concentrates are used inside the country, but most of them are exported to other countries, such as the UAE." Traditionally distilled rose water is of higher quality. This method has been practiced in Iran and the Middle East for more than a thousand years. Big metal pots are placed above clay ovens before sacks of fresh rose petals are poured into them. Water is then added to begin the steam distillation of the petals. Copper-made jars are then placed in narrow cold spring water pools and metal pipes connect the pots to the jars. Vapour produced from the flowers passes through the pipes and immediately turns into rose water. The process, which takes about eight hours to complete, is not just for rose water production but other concentrates made from a wide range of therapeutic and aromatic herbs. The process attracts large numbers of tourists to Qamsar in May. Thousands of visitors come to buy rose water and observe its production process. "The reason we come here is because they have rose water extraction tools and produce it here. You can buy rose water from any store in Tehran or other cities but the aroma of fresh flower that spreads during the distillation is so pleasant that drags you down here from long distances." Farzaneh Rezaie, a tourist from Tehran says. There are normally three types of rose water classified as grade 1, grade 2 and rectified rose water. The last version is the most expensive type, produced as a result of repeated distillation. Rose water producer Tayebeh Ghafarpour runs a family business, learning the craft from her father and grandfather. The scented water has many applications. As a flavoring ingredient, rose water has an outstanding place in Middle Eastern cuisine and is widely used in Iranian, Indian, Moroccan and Egyptian delicacies and desserts. Smelling genuine rose water is like walking through a blooming garden and commercially, its biggest use is in perfumes and skincare. The aromatic water is in fact a by-product of a thicker substance called essential oil or rose oil. Just a litre of the pure essence sells for tens of thousands of dollars. The best way to do this in Nepal is volunteering. Volunteering in Asia countries gives you an opportunity to learn about other countries a lot. WWOOF volunteering in an organic farm was the best option for us, as we got a chance to live with Nepalese family, far away from touristic areas in a town called Shukranagar (Chitwan district).
